Ingredients

For the balls

  • 200 g walnut (ground)
  • 200 g crackers (of your choice, ground)
  • 200 g apricot jam

For the coating

  • 200 g chocolate (milk or dark, chopped)
  • 4 teaspoons of walnut oil

Instructions

  • Put the ground walnut, ground crackers and apricot jam into a medium bowl and knead them together. You will get a soft mixture. Transfer the mixture into the freezer for 10-15 minutes.
  • Grab a small pot, pour a glass of water into it. Find a pan that fits over it, put it on top, and put the chopped chocolate in it. Pour the walnut oil over the chocolate and start heating over medium heat until the chocolate melts and mixes with the oil. Stir well and you will get a nice shiny chocolate mixture.
  • Line a baking sheet with baking paper.
  • Take out the walnut mixture from the freezer and start making small balls. Mine were about 2 centimetres in diameter, so I got 54 little balls. Now you have two options for coating.
  • Coating 1: Put all the balls on the baking paper about 2 centimetres from each other. Slowly pour the chocolate coating onto the balls. Optionally, you may sprinkle a pinch of ground walnut on the top of the walnut bites. If you do this way, it's faster, and the bites won't have chocolate at their bottom. Put them into the fridge for about one hour.
  • Coating 2: Make about 5-6 balls at a time, then put them into the chocolate coating. Shake the pan a little, and when the balls are coated with chocolate, you can take them out with using a fork and transfer to the baking sheet. This is a bit slower way, but the walnut bites will have chocolate on their bottom too! Sprinkle them with ground walnut and put them into the fridge for about one hour.

A little bite of perfection

Bonus tips

You can see that this is a very simple recipe, but even more great! Which is even more great in it, in addition to its simplicity, that it can be changed in so many ways. First of all, you can substitute the apricot jam with any other jam. Try it with blueberry jam or strawberry jam and add a half cup of chopped dried fruits to the mixture before you put into the freezer. You will get another gorgeous dessert. What about adding some chopped walnuts to have some crunch in it? Yes, please!

The second idea I have according to this recipe, that you can easily transform walnut bites into sugar free walnut bites! Just substitute the crackers, jam and chocolate with sugar free options.

You can easily make gastro-gifts for your loved ones. Make a bigger amount of mixture by (for example) quadrupling the amount of the ingredients. Divide into four, and flavor them in four different ways. One simple walnut bites as you read in the recipe. The second one with orange jam and dried orange peel. The third one with raspberry jam and white chocolate. And the fourth one with plums, for example! After the chocolate has completely solidified, wrap the various flavored walnut bites into different colored papers, put them into nice boxes, and they are ready to give as gifts.
